Ingredients For This Recipe

  • 7 cups whole milk
  • 1 cup heavy cream
  • 1/3 cup white vinegar
  • 3 tsp kosher salt
  • 1 piece cheese cloth
  •  

Preparation

  1. In INNOVE™ Dutch Oven, combine milk and cream.
  2. Warm gradually over medium heat until a food thermometer reads between 175° - 180°F. Chef’s Note: Don’t let it boil.
  3. Add vinegar and salt; mix well. Let rest for 20 minutes, then reduce heat to medium low; maintain temperature between 175° - 180°F.
  4. Line strainer with cheese cloth. Place strainer over a bowl and gradually add cheese curds. Let strain for 10 minutes to remove excess liquid.
  5. Transfer ricotta to another bowl and let cool.
  6. Refrigerate until ready to use.
